Winter soup kits for the freezer

Sometimes you have to get creative when you are a member of a CSA. And remember I was going to be doing 'what's in the box' posts? Well, obviously that hasn't happened yet. Let me explain. Every week I go to pick up our bag of stuff. To be honest, I'm a little disappointed. But I know that its only June and things should improve greatly. I hope.

The things I've been receiving are ordinary & in small quantities sometimes. Such as: the week I got potatoes-there were 3. And they were small. There are 5 of us! 3 tiny potatoes are nothing. I also received a giant bundle of leeks. They gave me a recipe for potato leek soup. But I had a lot less potatoes than leeks, so I didn't make it.


I've received a pineapple, mangoes & lemons. Umm, we are in Ohio. I thought the whole point of the CSA was to provide fresh, local products. Some of the things I am getting are packaged. Like fresh basil & cilantro. They are in the little plastic packs you get at the grocery store.

The one 'item' I get every single week is a one pound bag of the Immunity Blend Salad Mix. Its a bag of shredded kale, spinach, green onions & whatever else they have around. Its really delicious! The problem is I can't use it all so quickly! No one eats it really but me & D. I cannot let it go to waste. So the other day I came up with a great solution!

I blanched a pound at a time in simmering water.  
Then immediately put into cold water to stop the cooking. I then put it in a ziploc bag & covered it with V-8 juice. Veggie or chicken stock would be great too. But I had a lot of V-8 and we make tomato veggie soup often in the winter, so now its in the freezer ready to go.
  

Then being the green gal that I am, I saved the water I blanched in & boiled some noodles for later in the week.  See the little flecks of veggies?
  
And then I saved the water again to water our garden plants.
