I know there are some hard-core Lobster Roll lovers out there. But I don't get it. Maybe if I were sitting on dock in Maine it would sway me. But so far, not so much. So believe me, no one was more surprised than I that one day I would absolutely need to make Shrimp Rolls.
I kind of made it up on the fly, but I wrote it down!
The next day it was even better.
Ingredients:
1 lb. shrimp, chopped
3 to 4 radishes, sliced thin
1/2 c. greek yogurt
1/4 c. mayo
1 t. dijon mustard
1 T. rice wine vinegar
1 t. dried tarragon
True Lemon (or zest of 1 lemon)
chives, to taste
hot dog buns
butter
romaine lettuce
Directions:
In a bowl combine everything but the shrimp & chives. Mix well. Add shrimp & toss to coat. Let sit for a few minutes. Meanwhile, toast your hot dog buns. When toasted, butter them. Lay down lettuce for a bed & add the shrimp salad.
