Summer Fresh Chicken Parmesan

I got this idea from Crop Bistro where Sue & I went for Sunday Supper last year. She ordered this, being chicken and all, but I had a bite. It was amazing! I finally got around to recreating it at home.  

The already thin chicken breasts made this a snap to put together. I breaded them with a mix of Italian herbs & panko & shallow fried them. 
   

I roasted some cherry tomatoes for the 'sauce' but also sliced a fresh tomato on top & slightly melted fresh mozzarella over it.

It turned out to be a delicious & light summery dinner. Everyone loved it!
