As I mentioned last night, I tend to get caught up in my quests for new dishes & foods, so I often neglect the meals that are classic, comforting & delicious. Tonight's 'meal' was all of that & more. Grilled cheese is a veritable canvas on which to build new & flavorful taste combinations. (Just ask Matt Fish) For Brian & the kids, I kept it simple. Sharp cheddar on Italian bread slathered with butter, fried to a golden brown.
As for mine. I wanted my favorite combo. Sharp cheddar, fresh tomatoes & green onions. Any white onions would be fine, but the green ones were the perfect amount of bite.
Oh so delicious! I could eat 3 of these in a sitting. And since I ate half a block of cheese while cooking, a side dish was not necessary. I have a feeling when my tomatoes come in, I'll be feasting on these often.
Interestingly enough, my mother made grilled cheese sandwiches by putting bread in the toaster & slapping a piece of american between the slices when they popped up. I learned how to do it the right way from my first boyfriend's dad. I hope I thanked him!
