Pot Roast & Pepper Sandwiches

A couple of years ago, I came up with this super fast, easy dinner. Its definitely one of Brian's favorites. We recently rediscovered it. Although I don't love the meat that's used. It would be much better to use your own leftover grass-fed local meat, but this works in a pinch once in a while.

1 pack hot dog buns or sausage rolls (the buns are less 'bready')
1 bag frozen peppers & onions mix (or fresh peppers & 1 onion)
cheese-we love muenster, but provolone is great too
1 pkg. fresh sliced mushrooms
1 Hormel refrigerated beef roast au jus (not gravy)
1 T. butter

Preheat oven to 400 deg. In a sauce pan saute the mushrooms with the butter until cooked thru. Add the peppers & onions. Meanwhile, cook the beef roast according to pkg. directions. Open 6 of the buns & toast in the oven. After roast is cooked, distribute among the buns, add peppers, onions & mushrooms & top with a slice of cheese. Put back in oven to melt. That's it-dinner is served!

I just leave the meat off of mine, so its just peppers, mushrooms, onions & cheese. And I still love it!
