Grilled Tomato Caprese Toasts

I was inspired by the latest issue of  Vegetarian Times for these Grilled toasts. I'm gonna show you my favorite three. They are all amazing. But I'm only posting one at a time. You've heard about another one before & the last one is a surprise!

First up, Grilled Tomato Caprese Toasts.  This recipe is definitely an upgraded, better version of the original. You know how I LOVE caprese anything! I recently got a message from a reader thanking me for my caprese pasta salad. She said its her go-to bring along dish for all summer events & its always a big hit. She may have also called me a genius. So a big thanks right back at ya!


Slice your baguette on the diagonal, or if you were being lazy, you could certainly use sliced Italian bread, (like i did here). Although you should slice everything a little thinner to match the bread thickness or (thinness). Ok, heat up your grill. Drizzle your bread slices with EVOO to ensure a nice brown crunchiness. Slice large tomatoes kind of thick & drizzle also with EVOO. Place your bread & AND the tomatoes on grill. Keep an eye on all of them. The tomatoes can stand up to grilling more than you would think. You can use a grilling 'sheet' if you think they might fall thru.
After the bread is toasted, spread with pesto sauce. Now add a slice of fresh mozzarella. Top with a grilled tomato. Sprinkle with sea salt & garnish with fresh basil. 

The result is nothing short of amazing! The bread is crusty and just soaks in the pesto. The warm tomato has a softer consistency than raw & slightly melts the mozzarella. These were a big hit at our cookout last weekend. Give them a try!
