Avocado goat cheese sandwich

At lunchtime, do you ever just stand in front of the fridge & dip BBQ Pop-chips into the tub of cottage cheese? No? Its just me? I find that hard to believe.

But if you're feeling a just a smidge more ambitious, you should try this. One of the best sandwiches I've ever had is my own creation actually. Rudi's Rosemary Olive Oil bread toasted with smashed avocado & goat cheese. That's it. I love simple! Lately I haven't found my beloved bread or the new Wasa rosemary flatbreads, so I decided to take matters into my own hands (without baking bread of course). 


My own rosemary isn't ready yet, so I used my dry rosemary & crushed it up finely in my mortar & pestle. Then I smashed some avocado onto one slice of any old toasted bread & the other with smashed up goat cheese. Sprinkle with the rosemary. Put slices together. Done.


It may not look like much, but trust me.
