Mexican orzo with black beans

When I make Mexican Chicken for dinner, I usually just eat the baked salsa with orzo & cheese. I've long been wanting to make this into a real side (or entree for me). I finally I did it. And its everything I thought it would be! This would be a perfect side dish for so many meals

1 pound orzo, cooked & drained
~ 2 cups cooking salsa
1 can black beans, drained & rinsed
2 green onions, sliced (greens & whites)
handful cilantro
zest & juice of 1 lime (or TrueLime to taste)
Monterey jack or cheddar shredded

While the orzo is warm, combine in a bowl with the salsa. Add in black beans, green onions & cilantro leaves, torn & combine. Add lime zest & juice or TrueLime to taste. Top with shredded cheese and serve.
