Apple Squash Bake

Whilst perusing the produce section of Costco, I spotted these babies. 
I had no idea what to do with them, but I wanted them! I've heard the horror stories of peeling & dicing a butternut squash. No thank you.
$5 for 2 lbs. of diced squash-yes, please!

So I came home & googled a bit & came up with this deliciousness!




Recipe:
Apple Squash Bake
2 lbs. butternut squash, peeled & cubed
3 granny smith apples, peeled & cubed
1/2 cup cider (apple or pear cinnamon from Trader Joe's if you have it)
1/2 c. packed light brown sugar
1/4 c. butter, melted
1 T. flour (I used whole wheat)
1 t. salt
1 t. pumpkin pie spice (or any combo of those spices you like)

Preheat oven to 350 deg.
In a baking dish spray with cooking spray, mix the apples & squash together. 
In a medium bowl stir together the rest of the ingredients. Pour mixture over the apples & squash & toss lightly. Cover and bake for 60 minutes or until squash is tender.
  
I warmed some up for the kids for their after school snack today. I served it with a drizzle of maple syrup and a sprinkle of cinnamon. They loved it!

This would be a perfect side dish for pork (if you eat meat) or as a breakfast casserole with maple sausage (or soysauge) mixed in. And of course, being such a 'fall' dish, it would certainly be a great addition to your Thanksgiving table. Let me know if you try it!
