Garden Variety

This weekend was definitely productive. Would you believe we still have veggies & herbs in the garden?! D harvested everything on Saturday. We had quite a lot of herbs & a decent amount of tomatoes & peppers. 
 I made some rosemary infused oil, which is super easy. Can't wait to try it on some popcorn.
For dinner, I made a delicious pasta sauce with the tomatoes. I just simmered them with garlic & seasonings & added parmesan, some white wine & a little pasta cooking water to make a sauce. I threw in a little curly parsley at the end, also from the garden. Everyone liked a lot-success! I think the peppers will be part of tonight's stir fry.
 We also added to our curb appeal. For $60, I now have something else to decorate for the holidays!
The front is still a work in progress, but we're getting there slowly.

I also managed to make the kids all their sandwiches for the rest of the month. There's only 9 school days left, so it took hardly any time & is a huge time saver in the morning! They go into the freezer & are all thawed out by lunch. Its like a healthy 'uncrustables'. I used to do this for D-I was so ahead of my time. hehe.
PB&J with ground flax seed. To me, its the perfect lunch for them. Throw in some baby carrots & a tiny cup of hummus & they're set. Sometimes they get a mini Clif bar too.
