Southwestern Quinoa

I was going to go to the grocery store-I really was. But then a customer was having a problem & wanted to yell at someone about it. That someone, of course, was me. Since I did not make it to the grocery store, I had to shop the pantry. No quesadillas for us. I'm pretty much a one trick pony, so I made the go-to meal, a 'dump' dinner. You know the one where you start out with a grain and dump in a bunch of other stuff and call it dinner? Yeah. BUT this one was different. Quinoa was the only grain I had left in the pantry, so it was the winner! I cooked it up with just water instead of broth or something better.
This is the end result. Topped with shredded cheddar & a little bit of sour cream-it was delicious.

Everything in it:
Quinoa, black beans, sweet corn, canned tomatoes with the juice,cilantro, garlic powder, cumin, EVOO, S&P, onion powder and TrueLime.

I'll be honest, no one liked it but me & D- and he eats pretty much anything, so that's not saying much. Everybody else in this family thinks Quinoa is weird. Honestly they're all like 3 year olds. I spoon fed it to Bubba with him fake gagging the whole time.

All of that said, you should really try it. If nothing else, it filled their stomachs and was better then cereal for dinner!
