I love 'dump' dinners. Ya know, you take a bunch of stuff & dump it into a pan and it all comes out delicious!
The other day I was inspired to make these taco tortilla pizzas. I was excited about it of course. I think cumin is my deserted island spice. You know if I could use only one spice if stranded for the rest of your life, I believe mine would be cumin. Garlic isn't a spice & salt well, if I'm on a deserted island, I'm surrounded by salt water, no? What's yours?
Anyway, first I dumped in the rest of my red lentils.
They are split so they cook very quickly. I covered them with veggie broth, worchestershire and of course cumin.
While they lentils simmered I diced an onion and added it along with my favorite Quorn crumbles, frozen organic corn, 1 can of black beans and the remainder of a bottle of Trader Joe's Garden Patch Veggie juice. Garlic powder, TrueLime & salt finished off and I let it simmer away.
While in the fridge I realized that I had a some shredded carrots left and thought, why not? So I roughly chopped some and threw those in too. I have to say, the carrots really added something to the dish. Paired with the corn, there was an underlying subtle sweetness. I thought it amazing! I will definitely be adding carrots to future 'taco dumps'.
I still had a package of these in the fridge, so I fried them up before topping them and putting them in the oven.
After the tortillas were fried up, I topped them with a thin layer of the 'filling'.
Covered with cheese to bake until the cheese melted.
Served to the family. Some had sour cream, some did not. I had a little bit. It was delicious if I do say so myself. Next time I will use pitas for the picking up factor. You really needed a knife & fork for these & you know how much I love my pita pizzas, so I know it will work much better. But since I didn't have any, these worked in a pinch. As a matter of fact, I didn't even have to go to the store for this meal. Unless you count the sour cream, but that was more for Brian & BabyGirl.

D wasn't home for dinner, so I'm not sure if he is going to eat the rest of this. If not, its going into the freezer right next to the Turkish Lentils.
After dinner, Stewie had a quick playdate with his friend, Cody.
D & I are off to watch Hell's Kitchen, which I'm kind of over. Its the same show every season. I need more than that!
By the way, I finished my book, The Hunger Games. Have you read it? I could not put it down! I read until 2:30 AM. I wanted to run immediately to Target to buy the second book, but I controlled myself. After all the third doesn't come out until August 24th, so I don't want to have to wait that long after finishing the second so quickly since I'm quite sure I will. So I am biding my time. But I'm not sure how long I can hold out!
