Veggie Tacos

Most of the things I make are never the same twice. Its more of an idea and then tweaks from there-ya know whatever I feel like that night. Tacos are certainly no different, but tonight was different. These were so good I could eat them every day! So here they are. In the skillet:

the bottom of a bag of lentils from the freezer
you know how I feel about Quorn products!
along with red onions, garlic, cumin, salt & Worcestershire sauce-saute for a bit

then the secret ingredient-TJ's (V8) veggie juice
let simmer for a bit while you prep the toppings

I kept it simple, just lettuce, tomatoes & cheese I shredded myself after I found the grater! Yay!


I actually used their jack style, but my picture is blurry. It was SO good. I got coupons for any free dairy product from Organic Valley, so of course I got cheese! They are one of my favorite companies and I use their products anyway. I'll be giving a review on their new drinkable yogurts very soon! 

I didn't make refried beans for double decker tacos but you could certainly wrap it around a hard shell if you were so inclined. I was not. Why?

Let's talk about these for a minute. These are without a doubt the best taco shells ever! They have 3 ingredients, they're organic, they're affordable & they are a little bit of heaven! They taste freshly made. 
I got them at Nature's Bin. You should seriously search these out-totally worth it! I have no idea how much they were-I forget. Whatever it was, it was worth it. 

My first taco. After I ate it, I realized I forgot the sour cream (greek yogurt). So for my second, I put some on & instantly regretted it. It covered up the delicious flavors. 

I would venture to say this is one of the best tacos I've ever had! Sometimes I even shock myself.
