bread, graduations & pilates

So far today, I've crammed in a lot, I think. I woke up wanting to make banana bread because last night before bed I saw a commercial for Nutella and thought what could I spread that on? Then when I actually went to the pantry I discovered I didn't have enough flour. Sadness. But I did find this deliciousness. 
Box mixes are ok-just read the label! Shortcuts aren't the devil. And I WAS going to bake from scratch, it just wasn't in the cards. And this stuff is SO good. Everyone loves it. 

I was going to veganize it-theses are the 'eggs'. Ground flax seed subs for them & up the Omegas.

Then I measured out my 'milk' and found it to be bad, so I had to use regular milk. I guess I could have tried water. Maybe next time, but I'd hate to throw away a whole loaf because it sucked!

Replacing the butter was applesauce.

I sprinkled the tops with cinnamon & sugar in the raw.

One hour later-mmmm. You can eat it right from the loaf, as I do, or you can cut a slice and top with your choice of nut butters for a great snack. Sadly, these will be gone by tonight.

Whilst baking, I jumped on the pilates machine. I haven't worked out in quite some time & boy I could tell. The DVD I follow takes about 30 minutes and I was covered in sweat and sucking air for a bit there. Low impact, huh?

THEN, I showered and went to the twins' graduation program. It was so cute. Sadly, Bubba's best friend was crying-neither of his parents came. I seriously almost bawled with him-I was tearing up! So I told him he could come over right after school & we would do something fun. Right now he's playing Xbox with Bubba, so I guess that counts as fun to them.
