Today I cooked on the new stove for the first time. Twice! Not easy with no sink.
This afternoon I popped these in the oven:
These were pretty much just tempura batter with VERY little veggies. Ya know, I love Trader's Joes, but 2 sub-par products in a row? What is up?! On a happy note, the house smelled like a carnival and how can that be bad?
My new foodie friend over at Foodbuzz had a great recipe I was dying to try tonight. As you saw in my Menu Plan Monday, its was Turkish Lentils & Chickpeas. Oh my-I immediately had to leave her a comment expressing my gratitude:
"I made this tonight for dinner-oh WOW! I am in love. So easy & delicious. I of course tweaked it a bit, but before I did, I tasted it and was amazed how flavorful it was with just S&P seasoning! Thank you so much for this recipe which I will be making in giant batches to freeze for cold winter nights in the front of the fire!"

I started with my farmers market onion & eggplant. Both chunked and thrown into the pan with some EVOO.

I added garlic powder, a little curry powder & a pinch of cinnamon.
I topped mine with a little feta (which it really didn't need). It would also be great served over rice. You know how I love to bulk up & stretch my food!
Honestly, try this ASAP-you will not be sorry!
