Memorial Day 2010

Welcome back long weekenders! Ready to start the short week? I sure am-less than 2 weeks left of school-my kids are psyched!

The yard is a big improvement, but still needs some work. But it was perfectly fine for our totally laid back Memorial Day cookout. We had over Brian's mom & step-dad again. It was just us 7.
~homemade guacamole & salsa (store bought-I ran out of time)

I only put 5 ingredients in my guac-avocados, limes (juice & zest), onions, cilantro & salt-I'm a purist


~marinated pork loin (store bought also)

~shrimp & tomato skewers
These smaller shrimps & cherry tomatoes are marinated in olive oil, minced garlic, lime juice, melted butter, salt & green onions-I usually use lemon juice, but I have limes on hand

~grilled corn on the cob-this is first time we've done this!

~grilled polenta-brushed with balsamic & basil vinaigrette

~(leftover) caprese pasta salad-I added more cheese & more orzo, but its still delicious.

~mustard dill potato salad-I'll give you the recipe later-its really good & perfect for cookouts or picnics

I also made dessert-raspberry So Delicious coconut water sorbet scooped into a chocolate wafer cookie crust. I just ground the cookies up in the blender & mixed them with melted butter & pressed them into a pie plate to make a crust. I put it in the freezer to harden. If I would have had more time, I definitely would have made these into individual tarts-it would have been so much better-but it was still really delicious!

I have no idea what the week holds, but I know it will be crazy! I still need to do something with farmer's market finds-hopefully tomorrow.
