Name that dinner!

Remember when I made the rice I found in my pantry & I said I wanted to make a big pot of it? Well, I did. This is my 'mexican casserole'. That's not its really name, its needs something grander to do it justice.
For now I guess it will have to be Taco Rice & Beans. If you have anything better-let me know!

The ingredients are as follows:
~brown rice -1 whole box of minute rice-I don't know how to cook real rice-don't tell anyone
~3 cans canned diced tomatoes with their juice
~1 can black beans (rinsed)
~1 can kidney beans (rinsed)
~1/2 16 oz. bag frozen corn
~1 medium onion-diced
cilantro-more is always better
seasonings: cumin, garlic powder, coriander, paprika-just season to taste
Feel free to add anything 'taco' or mexican like. Chilis would have been good, but they're too hot for the kids.

Pretty much just cook the rice and then dump in all the rest of the ingredients. Simmer together. Easy! To serve, sprinkle with shredded cheddar & green onions if you want, & sour cream (or greek yogurt).

Brian found these chips for me-they are so good! And they're made in Ohio by Shearer's.
They're not awful for chips.

So I have a confession to make. I haven't gone grocery shopping this week and made this from pantry items & a few things Brian picked up at the store while he was out. That computer virus at work just totally destroyed me! But I am happy to report that my WONDERFUL office manager, Patricia, fixed it today! She rocks! Soooo, my pantry is running dangerously low on supplies. I have everything for the meal tomorrow night, but after that, I think its time to go to the store. But I should take this opportunity to say-see how awesome it is when you have your pantry stocked with go-to items to throw together a meal?! And now that my pantry is now pretty empty, I guess I need to re-stock asap!
