Salmon Salad in case you don't know what it is-just like tuna salad, but made with (healthier) salmon. I buy the wild alaskan salmon from Costco. Its really good. Throw in some onion, dill, diced peppers, garlic, S&P, and of course mayo & that's it. (I may add some capers next time) I like to make it ahead & put it in the fridge so the flavors can marry. According to my MPM, I was going to make steamed broccoli, but I wasn't feeling it, so I just toasted the wheat bread & threw some organic baby carrots on the plate. Done!
