MPM re-work (with update)

I did dinner & a movie with my sister & friends, but I still needed to feed my family. Sure, I could have left it up to Brian, but who knows what they would have ended up eating! So I switched up the menu plan & made the Scallop Corn Chowder from The Comfort Table that was planned for Friday night. I'm sure there will still be leftovers for then. Unlike the mexican chicken that D had 3 plates of! It was really fast & easy to make & very light. There is no heavy cream in it, but you really wouldn't notice I don't think. I would definitely make it again. No leftovers for Friday! UPDATE: You can find this recipe here: http://www.foxnews.com/story/0,2933,466947,00.html

That's roasted corn from Trader Joe's
The frozen corn with milk.
The final product. Its really the best picture I could get-sorry!

Now for the cost breakdown:
Frozen scallops (1 lb): $6.49
onion-$.50
roasted corn -$2.49
milk & veggie broth-I already had- lets say $2.00 worth.
TOTAL COST: $11.48
