I am half Italian (the wine & cheese half, I think) & my grandma's cooking is out of this
world! She's 90 & doesn't cook anymore, but I've learned a few of my favorites over the years. Her meatballs still elude me, but I'm okay with that. I only wish she would make them one more time for me. When our kitchen is done, I plan on having her spend the weekend, so maybe I'll shove a bowl of meat in front of her. I would make an exception to no meat for those I tell ya!
Anyway, this meal is so simple & delicious. My whole family loves it, except Bubba who 'wouldn't eat broccoli if it was deep fried in chocolate sauce'. Know that reference??? I say it a lot actually since we eat lots of broccoli. Ok, enough rambling, here it is.
First, get one of these. It helps.
2 pounds of frozen broccoli in the frying pan. I've tried fresh & it just does not work.
Granulated garlic from Costco. This is one of the most important ingredients. Why is it sideways???

You want to cook it until its kind of soft and a little carmelized.
Then when the spaghetti noodles are done, put them directly into the pan with the broccoli.
Plate up & cover with a generous amount of parmesan.
Garlic & parmesan are the two (of four!) keys to this dish. Lots of both make it fabulous!
