Cookbook craziness

Last night I stopped by the library before dinner. Probably not the best idea, since we didn't get to eat until 7:30! Nice parenting, I know. But the beauty of Menu Planning is, I can change it up at any time. I already have all the ingredients on hand, so I can change to something that takes less time. Huevos Rancheros was that meal tonight, not salmon salad sandwiches. I had never made it before but it was delicious & so easy! Next time I'll serve it over rice or orzo to round it out.

I was at the library because I collect cookbooks and realized I do not use them to their full potential. So how can I justify buying more? Well, I can't. So off to the library I went. I went in for one & left with 6. I wanted more, but I couldn't carry them all! This is what I got:

the art of simple food

I'll let you know as I go thru them how they all are & what I make.

 The recipe tonight came from a cookbook I own called More-with-Less. Its a Mennonite cookbook apparently, but the whole premise is cooking naturally, simply & saving money. I need all of those! There are no pictures and it is bare bones basic. Maybe that's why its $13 & not $35! I plan on using this one alot more!











So, this is dinner-seriously 3 steps to the plate!
Onions, peppers, garlic sauteed in oil.
Add in 1 can tomatoes (any kind-crushed, diced, whatever). About 1 cup of tomato sauce (can be spag. sauce), then chili powder & cumin to taste.
Make little 'holes' in the sauce in to which you will break 6 eggs. Cover them with a little bit of sauce & some cheese. My cheese slid off, but that's ok. Cover with a lid. Cook until the 'doneness' you like. I like my eggs with a bit of runnyness-that makes some people gag.

Section off one egg per person & plate up. This would be where I would be topping my orzo/rice next time. I guess this is technically the Forgotten Protein-Take 2. So there you have it, dinner in 10 minutes. Beat that Rachel Ray!
