Baked eggs in roasted tomatoes- 2 WWP

I found this recipe in this month's Whole Living & couldn't wait to make it! I made just one of these for myself for dinner last night. You could make as many as you like. This would be delicious for breakfast or lunch too! Actually I think that's what I'll make today.

Ingredients:
1 large tomato, scooped out
1 egg
Olive Oil cooking spray
fresh thyme leaves
S&P

Directions:
Spray the tomato with cooking spray & bake at 400 degrees for about 30 minutes. Break an egg into a small cup to pour into your tomato. Sprinkle on your thyme, S&P. Bake for another 6 or 7 minutes. I wanted my yolk to still be a little runny. You could absolutely add a little grated cheddar or parmesan to the top, just add the points for it. Enjoy!
