Pineapple Fried Rice (Weight Watchers Points-4)


I was inspired by a recipe I saw in Vegetarian Times for this delicious side dish. I may have eaten it for dinner actually, I really liked it!



Pineapple Fried Rice
make 18-1/2 cup servings (9-1 cup servings)
1/2 c = 4 WWP

Ingredients:
1 large red pepper, diced
1 small red onion, diced
6 cups cooked brown rice ( I use instant)
1 20 oz. can pineapple chunks in juice
1 egg
2 green onion
1/4 c. soy sauce (4 T.)
3 T. toasted sesame oil
ground pepper
garlic powder

Directions:
In the largest skillet you have, saute the pepper & onion in 1 T. soy sauce. Add ground pepper and garlic powder. When soft, add in your rice. Fry for about 5 minutes, then add the remaining soy sauce. Make a 'well' in the middle of your pan, and scramble your egg, making sure its broken up into little pieces to go all throughout the rice. When cooked through, add into your rice mixture. Add in your pineapple, juice & all. Heat through. Stir in sesame oil & green onions. Enjoy!
