Mexican Pizza- 3 WWP

I wanted to show you Brian's too since mine is mostly covered in lettuce! (I LOVE lettuce)


Mexican Pizza
makes 1 personal pizza

Ingredients:
1 whole wheat pita (split in half so its crispier), you can also use a small flour tortilla for 3 points
1/8 cup black beans, heated & slightly mashed
1 oz. lowfat sharp cheddar, shredded (I love Cabot)
fat free salsa
2 T. Greek yogurt
tomatoes, sliced
green onions
lettuce
S&P
Garlic powder
Cumin

Directions:
Prior to assembling & baking, I crisped these up on the stovetop griddle. I like it really crispy! In a small pan, warm through your beans. Add S&P, garlic powder & cumin to taste. Add some salsa to the beans. I used salsa verde & traditional tomato, both fat free. Spread your pita with the beans & top with shredded cheese & tomato slices. Bake until cheese is melted. Top with green onions, lettuce & greek yogurt. Enjoy!

This would make a great lunch or have 2 of them for dinner. They're pretty filling!
