grilled veggie sandwich with basil mayo

You're gonna love this sandwich! It makes me think of Giada, I think she'd make something like this.

I just received this from our neighbors at the lake. (baseball added for perspective) Yum!


So, I start out by grilling my veggies planks: eggplant, zucchini, summer squash.
I also grilled some asparagus for the side just because I had some & we love it!
 Next, drizzle your bread with EVOO & grill till crispy.
I found this 'unwrap & roll' fresh mozz at my grocery store & proclaimed it perfect for this sandwich!
Next, spread your bread (top & bottom) with basil mayo (recipe below)
 Start layering. Veggies, cheese, more veggies.
 See my roasted red pepper at the top? I think they can be a bit overpowering, so I only use one layer.


Ingredients:
1 loaf unsliced fresh baked Italian bread, slice lengthwise in half
2 zucchinis
1 summer squash
1 eggplant, medium size
1 roasted red pepper (from the jar), slice lengthwise
1 unwrap & roll fresh mozzarella or 1 log, sliced
1/2 cup mayo
1/2 cup fresh basil leaves
juice of 1/2 lemon

Directions:
Slice veggies into thick planks. Drizzle with EVOO & grill till cooked through. Let cool. Drizzle bread with EVOO & grill till crispy. While bread is grilling, in a food processor or high powered blender, combine mayo, basil leaves & lemon juice. Add a little sea salt if desired.

Spread both sides of bread with basil mayo. Start layering 1/2 of the veggies. Top with cheese. Layer the rest of the veggies & roasted red pepper. Top with top of bread. Slice to serve.

Notes:
Make sure your slices aren't too thin as this sandwich gets a little 'slide-y". If you were to serve this for a gathering, you may want to insert a toothpick into each slice to hold it together.

I also think this sandwich would be great for travel. Just wrap it up tight & stick it in your cooler.

To veganize-skip the cheese & Veganaisse instead of mayo.

This sandwich comes together pretty quickly & is perfect for a hot weeknight dinner. The basil mayo is amazing! I hope you love it!

And by the way-I cannot believe I have lived this long without one of these! OMG-my life is so much easier now! (and I paid 3 bucks!)
