Taco Soup

Everyone loves this soup! That is no small feat in this house, let me tell you. 
So, here it is.

 The main ingredients
Slice a sweet onion & saute in oil until soft & translucent. 
 Now, this is where the magic begins. I add in my vegetable broth base and cook for another minute or so. 
Now we're building flavors.
 Add in the spices: coriander, chili powder, paprika, adobo, lots of cumin & TrueLime (at the end)
After cooking the spices for about 2 minutes, I add 2 cans of diced tomatoes with juice, green chilies, black beans (rinsed) and hominy. Let simmer for about 20 minutes. Add any additional seasonings to taste along with S&P.

I realized I didn't take an after picture! Duh.
Here's a stand-in from the Vegan Bachelor (now defunct?)
Top with green onions, cheddar cheese, sour cream & tortilla chips.
