Are all lettuce wraps Asian? The only ones I've had are. Maybe Mexicans are jealous. And by Mexican, I mean the the stuff I throw together in a pan & season with cumin. Anyway, winter has been wearing on me again, so I wanted something light, but warm. My family isn't big on Asian flavors, so I varied a familiar theme in this house & came up with Mexican lettuce wraps. The whole thing came together in 25 minutes.

BabyGirl was kissing up to get money for the bookfair at school, so she set the table. Yes, those are paper plates & plastic silverware. Stop judging.
Start with 2 cans black beans, rinsed
Add in 1 16 oz. jar cooking salsa. More about that later.
I cut up 2 Quorn naked cutlets-my local store doesn't carry the tenders yet.
My beloved. I also threw in a diced onion & a cup of frozen sweet corn.
Into the skillet-just to warm through.
I made it a fancy party like setting.
I put the platter on the lazy susan so everyone would have access.

Mexican Lettuce Wraps
Ingredients:
2 cans black beans, rinsed & drained
2 cups protein of your choice (ground beef, chicken, chick'n, or none at all)
1 16 oz. jar cooking salsa*
1 c. frozen sweet corn kernals
1 medium onion, diced
cumin to taste
TrueLime to taste (or 1 lime-zest & juice)
Toppings:
lettuce (to form cups)
tomatoes
avocado
shredded cheese
whatever taco toppings you like
Directions:
In a skillet, all ingredients except toppings. Heat through. Prepare your toppings & arrange on a platter or in bowls. Scoop the 'meat' into a lettuce cup & top with desired toppings. Roll up & enjoy!
*'Cooking salsa' is the cheapest jarred salsa I can find. It lends great flavor to cooked dishes. 'Eating salsa' is the fresh kind you buy in the refrigerator section at the grocery store or you make yourself & eat with chips. See?
