I'm back! I haven't done a menu plan in quite a while. Not to be a downer, but I'm really glad the holidays are over. I completely over-indulged this season! It feels great to be getting back on track. That being said, here's what we'll be eating this week.
Monday~Chicken Paprikash (I never made it Christmas Eve)
Tuesday~Leftover ham & scalloped potatoes (from my MIL) with broccoli
(I almost feel bad that my family gets so excited about meat these days. Almost.)
Wednesday~Vegan Lentil walnut loaf w/ mashed potatoes
Thursday~BFD
Friday~Black Bean sweet potato enchilada casserole
In addition to cutting down my portion sizes, I'll be eating lots of greens this week in the form of salads, soups & smoothies. I need to drop the 6 (!) pounds I've gained since Thanksgiving & cleanse a bit.
Why does it go on so easily & take forever to come off?!
