Welcome back! I can't believe its Sunday and we're getting ready for another week.
Back to Friday night. I was a wise girl to eat before the wedding. They did not have vegetarian dishes-they had mashed potatoes & I could pick meatballs out of the pasta. I also scraped together what was left from the veggie tray. No worries I filled up nicely. I sat next to a friend of ours who is also a vegetarian. I would never ask anyone to make accommodations for me, so that's why I ate ahead of time.

The wedding favors were so very cool-they made up CD's of the bands' concerts that they've been to. So you could choose from all the different ones. By the time I got there-they were kind of picked over, but I scored REM & Billy Joel. Yes I like Billy Joel. Don't judge.
As for the actual wedding music-it was an Irish band playing all Irish music. Which I HATE! So yeah, no wedding dancing for me!
Of course, I met up with my sister afterwards. [Honestly this is the best picture I have of my dress-sorry! We were running late because Brian had to work and I had no time for a photo shoot :( ]
Look how much fun Brian was having! We (not Brian) danced and had a great time-they played a lot of fun songs!
Saturday morning I slept in a bit of course. It was a beautiful day out so Brian worked on the last counter top -woohoo-almost done! Later in the day, I grabbed my Turkish Lentils & Chickpeas from the freezer and set them out to thaw. I thought that would be awesome quick dinner served over brown rice. And it would have been, but then while the rice was cooking, I stood over the pan and ate some of it and realized that there wouldn't be enough for everyone. Oh I forgot how delicious it was! I will be making big vats of this all winter long!
Back to dinner, D texted me at about this time asking for Chinese food for dinner. Brilliant! I sent Brian to the store for just a few items-I had most stuff on hand.
Giant Cauliflower!
Rice Noodles-this was my first time having them-yuck. I do not care for them.
I cooked the veggies in soy sauce, garlic powder and five spice powder. I made the mistake of leaving them to cook while I showered. They were barely crunchy. Oops. But they still tasted really good.
I drizzled mine with Toasted Sesame Oil-which I think makes a huge difference.
Now, I'm going to say something and I expect most of you will think I'm crazy. I don't like banana soft serve.
Hear me out. One not so sweet banana ruins the whole batch. Every time. So last night, I decided to make this and went to the other side of the basement with all the kitchen boxes to find one of my mini food processors. (I have 2-its a long story) Anyway, I couldn't find either but I did find the large one we got for a wedding present.
This poor thing is not heavy duty & I had to hold it down until the bananas were chopped.
I realized too late that my antique processor has some issues-like the bowl is cracked, the blade piece has a missing piece and it has just fallen apart in general. Its garbage which is sad, but I still have the 2 minis. I now need to recycle it.
Back to the soft serve. I must have had quite a few not great bananas because the whole batch wasn't great. I topped mine with Nutella and ate it anyway of course. But I'll use the rest of the frozen bananas for smoothies.
After dinner and dessert, we watched Up in the Air
. I liked it-it certainly didn't turn out like I thought.
Today is a lazy day even though I have a ton of things to get done this week! I finally found this at Costco!
I love making ranch dip from this & non-fat Greek yogurt instead of sour cream. So that's what I had for lunch today.
I was so excited about that giant head of cauliflower-I decided to make mashed cauliflower since I've never had it. I thought I'd roast it for extra flavor. I tossed it with evoo, S&P & garlic powder. I use my hands-its like a mini hand treatment with the oil moisturizing & the S&P to exfoliate.
I mash these up with the cauliflower, some butter & a little sour cream. It was good-the roasting gave it great flavor.
I also grabbed some cans of chicken & mixed in some BBQ sauce for the rest of the family.
They ate theirs on rolls. I just topped my cauliflower potatoes mix with BBQ sauce & called it a day.
I swear, I am getting lazier by the day. I haven't done a full grocery shop in I don't know how long. But I kind of like it. I think I spend less money, which is always a plus. I used to shop just once a month! Meal planning also helps me a lot with saving money.
I can't believe its August! I have some other fun events this month besides the reunion and the party, I have a 4 day (!) bachelorette weekend, and my birthday.
