Because I don't have nearly enough to do, I decided to bake up a little something. Its like 100 degrees in my house-I refuse to turn the air back on! So I took to the basement kitchen-which I think I need to rename The Winter Kitchen. Doesn't that sound infinitely more attractive than 'the basement kitchen'? I thought so.
Moving on.
Apparently this recipe is taking the web by storm. I can see why-they sound like a bit of heaven! What did I make? Muffins that Taste Like Donuts. Mmmmm. This post will actually include a real recipe-how novel! Ok, let's go.
First, mix together the dry ingredients. I like to use a whisk. Next, in another bowl, mix up the wet. Add dry to wet and gently stir, just to combine. Honestly, could this be any easier?
I used ground flax seed with water in place of the egg-I LOVE that you can do that!
Dipped in butter & cinnamon sugar while still hot.
BabyGirl & I cheated and tasted one before they cooled. The verdict? They do taste like donuts! The texture is light and cake like, not dense like a muffin. They cooked in only 17 minutes, so we spent 30 minutes total making these things. You should try them ASAP!
And since its the last night of summer vacation, we had a fun dinner.
Someone ate my last veggie hot dog, he knows who he is-so I scrounged this up in the freezer. Ugh-it was freezer burned and dry & gross. Good thing I love tater tots!

Muffins that taste like donuts
· 1-¾ cup Flour
· 1-½ teaspoon Baking Powder
· ½ teaspoons Salt
· ½ teaspoons Nutmeg
· ½ teaspoons Cinnamon
· ⅓ cups Oil
· ¾ cups White Sugar
· 1 whole Egg
· ¾ cups Milk
· _____
· FOR THE TOPPING:
· ¼ cups Butter
· ⅓ cups White Sugar
· 1 Tablespoon Cinnamon
Preparation Instructions
Combine flour, baking powder, salt, nutmeg and cinnamon.
Combine oil, sugar, egg and milk. Add dry ingredients and stir only to combine.
Bake at 350 degrees for 15-20 minutes. Meanwhile, melt the butter in a bowl. Combine the white sugar with the cinnamon in another bowl.
Shake muffins out while still hot. Dip muffins in butter, then into the sugar/cinnamon mix. Let cool
Prep Time: 10 Minutes
Cook Time: 15-20 Minutes
Yields: 12
