Patricia at the office talks about this dish that her boyfriend makes all the time. She raves about it! At first all I could figure out was it had basil & cherry tomatoes & garlic. Well, as soon as I found myself with an abundance of cherry tomatoes, I begged her to get me the recipe. She did and I am so thankful. Today, I could think about nothing else but this dinner. Of course I didn't follow the recipe, I used it as a jumping off point. But I'll include it for you to try for yourself.
Into the pan, EVOO & diced onions. After sauteeing for a few minutes, I added minced garlic to the top. In the meantime, I'm boiling water for my noodles-I didn't use linguine, I used gemelli since that's what I had.
Throw in your cherry tomatoes. I just filled the pan until it looked like enough.
Smashing the tomatoes was pretty fun. The under ripe ones were resistant, but I got 'em!
I'll be honest, at this point I wasn't convinced I would like this. It looked all watery and full of seeds and I thought, wow, how is this going to come together?
I dumped in my noodles & mixed it all up.
Topped with parmesan & extra basil leaves. I have to tell you, this one's a winner. Easy to make and really good! Its a perfect way to use up those cherry tomatoes & the fresh basil (from my plant) adds a real summery freshness. The pasta sucked up all the sauce perfectly.
I hope if you find yourself with lots of cherry tomatoes, you will try this-you'll like it!
I'm pretty sure I'm going back for more right now. I bet its gonna be delicious cold for leftovers!
Linguini Margherita
4- 6 - Cloves of garlic chopped
6 - Big leaves of Fresh Basil
1 - cooking onion or 1/2 of a big regular onion
salt (to taste)
crushed red pepper (to taste)
Parmesan cheese (to taste)
1 - pint Cherry or Grape tomato
3/4 - pound of Linguini
In frying pan add Olive Oil garlic and onion, simmer on very low heat caution not to brown. Next add Cherry/Grape tomato, basil, salt, and crushed red pepper. Cover and let simmer on med heat for 10 min. After 10 min uncover and crush remaining tomatoes with spoon or fork and mix contents of the pan together. Continue simmering on very low heat for 5min then add to Linguini and also add Parmesan cheese. Serve.
