I made it to Vegetarian Summerfest! We arrived late last night & are scheduled to leave tomorrow after a couple more lectures for me. Brian, as expected, is kind of bored, but he's doing ok. I took great notes today and learned a lot. I decided I am pretty much done with eating fish and seafood-so that's kind of big! After hearing some things, I think its not worth it, so that all. No more fish tacos-BOO. But they were really more about the other ingredients-I can probably make a great substitute with tofu.
I've only had one meal here so far & I'm sorry to say, I didn't love it. Brian said when I was vegan for a month I made better tasting meals than we had tonight. I found that to be a great compliment! But I also recognize how difficult it is to create & execute meals for that many people! I am very much looking forward to breakfast. I saw Terry Hope Romero at dinner tonight, but I was leaving, so I didn't get to say hello.
I can't wait to post all the pictures I took & tell you all I've learned. We are also hoping to go to Ikea for the very first time on the way home! Now that's exciting! See you all soon!
