Eggs & peppers

My mother was a pretty bad cook. She baked steak in the oven. Actually she baked everything. On an aluminum pie plate. 350 for an hour. She was the daughter of the grandma I speak of all the time-the one who is moving in. I guess she wasn't watching and listening while my grandma was cooking. While my grandma doesn't cook anymore, I'm all ears for anything she wants to tell me. I imagine interrogating her for secrets in the kitchen! I can be intimidating you know! I'm kidding, of course.

Anyway, one thing my mother made that was actually really good was eggs and peppers. As usual, simple & delicious. Three ingredients. Eggs, green peppers & salt. And the EVOO you cook the peppers in of course.

In a skillet, saute smallish cut peppers. They have to be green. Trust me.
Whip up some eggs. This is 10 for a large pepper. I also added a little water & salt.

Very carefully pour the eggs over the peppers so they stay spread out evenly.
This is the kind of tricky part. I am no expert on omelets at all-so this is not easy for me. You need to keep it kind of in one piece, lifting the sides to let the liquid under to cook. But then at the end, you can break it into large pieces to flip.
When all of it is cooked, transfer to a plate to cool-then move it to the fridge. (I made this at lunchtime so it had time to completely chill.)
 That's right, this dish is eaten cold. On bread. With mayo.

Clearly its a bread & mayonnaise kind of day. Personally I'm a mustard girl, but I like mayo when appropriate. I suppose you could add lettuce, but I never have. I think its perfect as is! I hope if you try it, you like it as much as I do. But sometimes things from your youth that you love, other people don't get. My family all said 'eww' and ate something else! Be brave-I think its awesome!
