Teriyaki salmon over greens with goat cheese and pine nuts

Is there anything more satisfying than eating from your own garden? I think not! Tonight, I went to the garden to pick some lettuce for our salad.
Rosemary!
I painstakingly washed each & every leaf. Then into the salad spinner for a ride. I added the rest of the arugula I had before it went bad also.
The inspiration for this meal? I found this at Costco.
I bought some beautiful salmon filets and into the sauce they went to chill (literally) for a bit.
I decided against grilling and chose to saute/shallow poach in the delicious teriyaki sauce. Good choice!
And you know me, if there's goat cheese & greens, there's toasted pine nuts!

This dinner was FANTASTIC! The salmon was juicy moist & flavorful and of course the combo of goat cheese & pine nuts never steers me wrong.

Tonight-back to back episodes of Hell's Kitchen. Although I don't really like anyone this season. I think the network's just churning out shows to make money. How shocking, I know!
