Leftover Lunch with Lemon

National Alliteration Day? Anyway, I've been eyeing the leftover teriyaki salmon in the fridge. Today was the day! I warmed up a little leftover orzo, crumbled some goat cheese & squeezed 1/2 a lemon over it. Topped with a slightly warmed piece of the salmon-MMM. Delicious.  I didn't want to eat too much since I'm eating out tonight, so I kept it to a small portion. I'm sufficiently satisfied & ready to pig out at dinner!

Lemon screams summer to me! When we go up to Put in Bay & get the lobster bisque at The Boardwalk, I always get extra lemon & squeeze a ton into mine. I'm trying to get back up there, but we just have so much going on this summer!
