Egg cups

First of all, BabyGirl wanted me to show everyone her picture. Her bus driver gave her this owl.

I have been a busy bee today! I love when my house is clean. I just wish it would be more often. But such is life. 

My bookshelves are SO clean! And most of the books that live here are back. Some are still in my room. I'm sorry I know its a weird angle, but I'm sitting and I'm too lazy to get up!

For a snack I had this little bit of heaven

For lunch I stood in front of the fridge and ate the tiny bit of noodles & sauce left from last night. I think someone got into it before me-it look a little disheveled. I had to go to Marc's and found this adorable little trial set of 'green' cleaning stuff. 99 cents! How cute is it!!

When I got home I realized that I needed to still make dinner. Does it sneak up on you, too? It can't just be me! 
I got the egg cup idea from someone and I cannot remember who! If its you, please let me know! So I wanted spinach in them and had some frozen but I was too lazy to defrost, so I just ran it under hot water until I could break it into pieces and put some in each ramekin. (Fingers crossed)


I figured now would be a good time to season, so I put some salt in all of them. Then I wasn't sure what kind of cheese. Then I remembered these!


Cover with beaten eggs & bake at 350 for about an hour.

While they were in the oven, I realized I forgot to spray them with PAM. Oops. That was a slight problem, but nothing a little soaking can't handle I think.

So what was the final verdict?

D and Brian didn't care for them, the twins & I did. Bubba like something with spinach-I almost fell over.
I realize now that mixing ALL of the ingredients together and then putting them in the ramekins would be much better. Also, those cheeses, they don't melt very well. So different cheese would be much better. Will I try them again? Absolutely. I even think a little sausage would be good for my little carnivores. This might even be a cool thing to make for like Christmas morning. I didn't get around to frying up the corn meal mush, so I promised them I would make it for brunch tomorrow. 

Speaking of tomorrow-family will be arriving mid-afternoon, so I hope to be ready for everyone. I'll try to post tomorrow before they get here, but who knows. If not, I'll be back with a big post, I'm sure. Regardless, have a great weekend!
