Mexican Chicken

I will apologize ahead of time-my camera is sucking today!
So, I've decided to add in how much meals cost me just for reference (yours & mine).

So I added up my ingredients for my mexican chicken. The ingredients are from 3 different stores-that's just the way it worked out.

Amish hormone free chicken- 2 packages of skinless boneless thighs - $1.76 + $1.73 (from Marc's, breasts were nowhere to be found, so I thought these would work also)

1 box orzo -way harder to find than you would think. Giant Eagle brand was the ONLY box I could find. Oddly enough there were only 2 boxes left-I bought them both. $1.00 each

Shredded light mexican blend cheese-Trader Joe's $2.00-I only used 1/2 bag

Salsa-for this dish I use the cheapest salsa I can find since it will be cooked. $1.59 each. I used both jars. Ideally since its tomato based I would like organic, but its just too expensive for this!

TOTAL COST OF THIS MEAL: $9.66 - probably 8 servings total-Not bad! I love leftovers for the weekends.

Step 1: spread a little salsa in the bottom of your baking dish, lay out chicken in a single layer


 
Step 2: cover all chicken with remaining salsa  


 
 
Step 4: bake for 1 1/2 if frozen/ 1 hour if fresh

Step 5: with about 10 minutes left for baking-cover top with 1/2 bag of shredded cheese, let melt



Serve over Orzo & enjoy!
