I'm back!! I know, you missed me, I missed you...let's not get all mushy & get right down to it. Here's the scene: there is one more day of school left, but its spring/summer, so baseball is in full swing. Two games a week & a practice if we're around. Did you get the memo that it was going to be a long, hard winter? I did, so I stocked the freezer chest, both fridge freezers & the pantry. Was it a long, hard winter? Yes, but in my usual fashion, I may have overstocked. So, since we really didn't get through all of that food, its now time to start getting through it. Its actually kind of exciting-what do I have, what can I do with it? Oh & it needs to be quick on baseball nights. Just like Chopped, right? Well kind of. Anyway, let's call it Overstock 2014 Challenge, yes?
OK-Overstock Challenge #1
Half a box of Quorn Chick'n Patties (2) & a whole bag of Chicken Patties (9)
I accept this challenge! I love Quorn patties so much & so do the kids, but there's only 2 so I'll eat one & one lucky kid gets the other, who's my favorite today? The rest of them gets the 'real' chicken. (not organic, so I assume Brian bought them. Ok, what to to with them...I have a giant package of swiss cheese...I have Trader Joe's dijon mustard...I got it!
Chicken (or chik'n) cordon bleu sandwiches! These are a Bubba favorite, so I knew they'd be a hit. I just needed buns & ham. Nitrate/Nitrite free of course. I still can't find great buns, so I settle on Brownberry Select, not the worst.
From the depths of the freezer I also unearth-half a bag of seasoned twirly fries, an almost empty bag of organic mixed veggies & another almost bag of organic green beans. One cookie sheet, everything goes except the veggies. Those go in the microwave with some butter & a little Sherrill House Seasoning (we'll talk about what that is in the near future).
After about 20 minutes, top of the patties with swiss cheese & put them back in to melt. Then top it with the ham.
Add a large dollop of the dijon to your bun & your sandwich is done.
Perfect! Dinner was ready in 25 minutes-not too shabby. I think I did pretty good for my first challenge-can't wait for the next one!
