Buffalo Mac & Cheese

I was really surprised at how amazingly good this is! I don't really like hot food, but this I can handle. This recipe is SO easy to make. You could certainly add some diced chicken or Quorn chik'n tenders & celery or green peppers to make it into a main dish casserole also. 


Ingredients:
1 lb. small noodles (I used regular penne this time, but the first time I made it I used baby penne)
1 8 oz. brick low-fat cream cheese, softened
8 oz. ranch dressing
2 cups. shredded cheddar cheese
10 oz. Frank's Original Hot Sauce (or to your taste)
4 oz. crumbled blue cheese

Directions:
Boil noodles until al dente. Drain. In your pot, add the cream cheese & add back in the hot noodles. Stir together until mixed well. Add in the ranch dressing & hot sauce. Stir well to combine. Mix in the shredded cheddar. Pour into a baking dish & cover. Bake for 20 minutes at 350. Remove lid & add the blue cheese over the top. Bake for an additional 10 minutes. Serve.
